I am always up for a cool new recipe and this one is definitely one of those. I like to take things that grow and make them into dishes that people wouldn't think of making with it. I have a tendency to love earthy flavors so beets are completely my style. I have made beet crepes, beet smoothies, and just roasted beets, but never a cake. The ingredients are very simple and the process very... pink. So don't wear clothes that stain!
Ingredients:
1/2 cup Whole Wheat Flour
1/3 cup Cane Sugar
3 Eggs
3 Medium Sized Beets
3 tbsp Cacao Powder
1/2 cup Dark chocolate
3 tbsp Olive Oil
1 tbsp Baking powder
1/4 tsp Salt
Topping:
3 tbsp Dark Chocolate
1/4 cup Milk
1 tbsp Coconut Oil
Instructions:
Cook beets in boiling water until you can stick a fork slightly into them. Leave a slice of beet out for garnish. While cooking the beets, combine the flour, baking powder, cacao, and sugar in a bowl. Fluff the eggs and salt in a separate bowl ( a hand blender works best). Use a double boiler or a makeshift one (a small pot of boiling water with a bowl on top) to melt the chocolate. Use a blender to grind cooked and peeled beets. Combine beets and melted chocolate. Add in flour mixture and stir. Add in egg mixture and stir. Pour the batter into a cake pan, don't forget to use butter or non stick spray on the pan. Place in oven at 350 F for 45 min. Take out and let cool.
For The Topping: Melt chocolate with coconut oil and milk over the double boiler. Spread over top and garnish with chopped chocolate and finely chopped or grated beet.
